Finally my last Post on my 28 Days of RAW - What have I discovered?

I must begin with an apology.  I had all intentions to post this on my last day of my 28 days of raw and there was a family emergency that needed my attention.

I must say it has been a very stressful 3 weeks but now I'm back and I wanted to post my thoughts on my personal 28 day challenge and what I discovered in the process.

I started to eat more and more raw food over the past year for it's health benefits and I wanted to up the ante and challenge myself to eat 100% raw for 28 days.  I have to admit that originally I wanted this challenge to be for the entire month of February and totally forgot that this year there where 29 days in the month.

So how did it go?

It was easier than I expected.  I do have to admit though that there were times throughout the month that it was a challenge prep things early in the day so that putting the meal together at diner was easy and not time consuming.

I also found preparing two meals, one for me and one for the family, time consuming and exhausting.  I wish I could have just prepared one meal for all.  Difficult when your family doesn't eat raw all of the time.

I really enjoyed the amount of energy I started to feel around day 3 and 4  then throughout the 28 days.  I often suffer with feeling off when eating some foods and I have to say I really am amazed that non of that happened throughout the 28 days.

With the added energy I also experienced a lot of clarity in my mind and was able to stay focused when working on projects and workshops.

Eating 100% raw when out and about for the day was difficult.  The only raw item on any restaurant menu is generally a green salad and even then they add toasted nuts or caramelized pecans and I'm pretty sure that some of the other ingredients are not raw either.  I frequented a cafe that specialized in organic cuisine a few times and was very surprised that the only raw items on their menu were juices and smoothies and of course your regular salads.  It took a bit of planning and prep the day before any outing, including visiting with my parents.

These 28 days has also given me a better idea of how to arrange my kitchen, do some preplanning and what items to have readily available so that I could easily put together a 100% raw meal.

I have mastered the art of making raw breads, "raw"sted vegetables, Raw Thai coconut curry vegetables, Raw Eggplant Bacon, an awesome macadamia nut cheese that tastes like goat cheese, raw pizza that tastes like the baked alternative, green smoothies and juices that are so easy to make and taste great, jicama rice for nori rolls or as a side and the list goes on.

In 28 days, my chopping, dicing skills have improved immensely and I can chop and dice in a jiffy and I have I have built up the confidence to make up my own recipes and dishes with whats readily available in my kitchen.

You might be wondering what next.  Well, you'll have to wait and see!  I have so many plans in the works for where to go with my raw food lifestyle.  I will definitely be eating raw and coming up with new recipes that I will be sharing from time to time.  So, stay tuned and check in every so often to see what I'm up to.
