Here is a pic of my latest new recipe!

Can't wait to dig into this pie...loaded with spinach and mushrooms!  :0)

Want to join me...I'll be happy to share!

Spinach-Mushroom Pie
(individual portion)

Take me to the Islands-Pineapple Delight Breakfast Smoothie

We have been having a flashback to winter this past week here in southern Ontario and I just wanted something that would transport me to a warm tropical island somewhere.  There is nothing more tropical to me than coconut and pineapple.  My favourite drink is a pine colada...great as an evening cocktail but not a good thing for breakfast.  ;0)

Just my luck...I had the two main ingredients on hand so I came up with this smoothie for yesterdays breakfast.

Pineapple Delight Breakfast Smoothie

1 cup ripe sweet pineapple
1/2 banana
1 tablespoon coconut butter (can use coconut oil if you don't have coconut butter on hand)
handful of spinach
1 cup vanilla soy milk
1 tsp maca (for that added energy boost)
1 scoop of vibrant greens
ice cubes (3-4)

Place all ingredients into a high speed blender and whirl away until smooth!

Enjoy

Love My Totally Raw Fridays

Throughout the week I eat approximately 80% raw foods because of my crazy schedule.  I'm hear and there and often when I get home I need to prepare food quickly and being the only raw foodie in my house it sometimes means I have to prepare two meals.  Usually my diner includes some cooked food and that is perfectly okay.

Since Fridays are a time for me to unwind and get chores done and play in my raw food kitchen, I have decided that I will be dedicating this day to staying 100% raw.  After all I have no excuse of a busy schedule because it really is the only day of the week that I have have off and can dedicate totally to myself and my well being.

So this morning I headed into the kitchen, opened the refrigerator and said hmmm.  What shall I make today.

This is what I love about raw food.  As long as you have a few staples handy (vegetables, fruits, nuts, good fats, olive oil, coconut oil, and fresh or frozen herbs) you can whip something together easily.

Today we will be serving the following in my raw food kitchen.

B: Mango Tango Smoothie

L: Home made raw vegetable crisps topped with avocado, tomato, sprouts and drizzled with olive oil and a splash of balsamic (yes, I know balsamic vinegar is not totally raw...I got over that one very quickly! LOL)

Today's Lunch

D: Raw mushroom burger with a large green salad loaded with my favourite veggies!

Mango Tango Smoothie:

In a high speed blender add the following:

1/2 medium ripe mango
1/2 medium banana
1 tsp maca powder
1 tsp green vibrance or greens of your choice
1 tsp coconut butter
1.5 cups vanilla almond milk

Blend and enjoy!

Starting my Friday with a Strawberry-Banana Green Smoothie

In Canada at this time of year we start to find more and more fresh organic produce in our groceries stores.

I love going in to explore what is available and brain storm about what I could do with the ingredients.

This week I picked up some fresh strawberries.  Making smoothies with frozen berries is good but fresh is even better.

Here is a smoothie recipe that I know you will enjoy!

Strawberry Banana Protein Punch
in your high speed blender add the following:

1 medium banana
5 fresh strawberries
2 cups water
1 large handful of spinach
1 scoop vegetable protein
1 scoop Green Vibrance or spirulina
1 tablespoon maca powder
Ice

Blend till smooth and enjoy!
